Evening dining continues to showcase the chef's expertise with hearty, flavorful options such as a snail fricassee with country bacon and mushrooms, a thick slice of Basque blood sausage from Maison Rozès paired with a smooth butternut puree, and a mustard seed jus that packs a punch. The slightly dry rum baba, accompanied by a minestrone of exotic fruits and a coconut emulsion, does not disappoint.
